RAW Chocolate Mint Truffles

These decadent truffles are so easy to make while taste like something from a gourmet chocolate boutique. The peppermint delivers a fresh and energising kick matching perfectly with the smooth chocolate texture. Share them with your friends!

Ingredients

  • 1 cup medjool or dried dates
  • 1 cup cashews
  • 1 cup desiccated coconut
  • 1/2 cup raw cacao powder or cocoa powder
  • 1 Tbsp cacao nibs
  • 1/4 tsp sea salt
  • 1 tsp natural peppermint essence or several drops of peppermint essential oil
  • 2 tbsp virgin coconut oil

Instructions

  • *If using dried dates chop roughly, place in a jug and cover with boiling water. If using medjool dates, remove the stones and chop roughly.
  • Process cashews and coconut into a fine meal. Add cocoa and salt and process until combined. Add coconut oil, peppermint essence and dates (draining first if soaked). Blitz for 1 minute until the mixture comes together. Roll into small walnut-sized balls and chill for at least 1 hour to set. Dust with a little cacao powder to serve.
  • Store in a sealed container in the fridge. Will keep for up to 1 week.

  1. You had me at chocolate and mint. Sometimes when I see raw food recipes there’s a lot going on but I think I could do these. I’ve never used cacao nibs before – are they easy to come by?

    1. Hi Lesley, I know chocolate and mint is a great combo 🙂 You will find the cacao nibs at any organic store but you can also make them without and they are just as good. Enjoy!

  3. Hi Nicola, where do you get a good peppermint essence? I’ve tried the Green grocer and fresh choice, with no luck.
    Also, following on from your travel 1st aid kit, I sent my daughter some grapefruitseed extract (I’d never heard of that as a remedy). She’s at uni, exams soon, and felt a sore throat coming on. She said it worked! so yay, I’ll be buying some for the home kit also. Thank you.

    1. Hi Susan, I used some from a friend that is alcohol free but she got it from the US. You can actually use peppermint essential oil too just a few drops would be enough. Aroma flex on trafalgar street have the best quality. And that is awesome about the grape fruit seed extract. It really can help if you use it early on!

    1. Hi Sarah, I get mine from our local Fresh Choice but it is quite a unique store favouring organic and local products. Some vege stores may have them, usually in a chiller as they are fresh fruit. Otherwise dried dates work fine if you soak them in hot water first. I have used both and comes out similar. Good luck !

    1. There is something quite amazing about the chocolate peppermint combo. You won’t be sorry. If you can’t get your hands on good peppermint essence you can also use several drops of peppermint essential oil. Enjoy!

  6. Yum, these are really good, the kids think they are chocolate, I used a little to much essential oil, 7 drops was a little much and it did overpower them slightly. Awesome recipe. Thank you Kim

    1. Hi Kim, thanks for your message. I know they taste just like chocolate truffles made from chocolate and cream. I would think 2 or 3 drops would be enough as the peppermint oil is very strong 🙂

  7. I made this recipe recently substituting 1 tsp ground dehydrated orange peel for the peppermint essence and they were divine. Then, since it was Xmas, I rolled them in melted chocolate! Thanks for the tip on dehydrating orange peel you gave in a recent post. Its opened up a whole new field of taste sensations.

    1. What a great idea! The orange powder is quite genius you can also use it in savoury cooking such as rubbed on meat or roasted pumpkin and kumara. Enjoy!
