Cooking Workshops Around NZ

My cooking workshops are more than a cooking class. They are a culmination of 20 years of studying, teaching, and writing about cooking and eating well. I interweave my knowledge of nutrition and share cooking tips from my experience as a trained chef. I have also studied a Certificate in Adult Education (NMIT 2008/9), which I find invaluable for sharing my knowledge in the best possible way.

My food focus is on flavourful recipes using everyday ingredients that are packed with nutrients, with a particular interest in traditional cooking techniques, including Sourdough Bread, Fermentation, and Home Preserving. Over the last 18 years, I have presented to over a thousand workshop participants and taught all around New Zealand including Auckland, Whangarei, Tauranga, Waikato, Napier, Palmerston North, Wairarapa, Wellington, Nelson, Blenheim, Christchurch, Hokitika, Geraldine, Dunedin, Wanaka & Queenstown.

I have been sharing my passion for cooking and eating well since I completed my chef & nutrition studies in 2003. What initially started as small cooking classes in my home quickly grew to evening cooking classes at the historic Fairfield House in Nelson. In 2006 I was invited to create and tutor a Cooking & Nutrition course for Nelson Marlborough Institute of Technology (NMIT). I ran this regular 6-week course until the arrival of my first child in 2010. I reinstated my cooking workshops in early 2014 and regularly teach in Nelson and around New Zealand.

More details about my Cooking Workshops:

  • The workshops are demonstration style, with plenty of interaction with the ingredients & food.
  • Workshops include delicious food samples and a recipe folder to take home – bring a pen to take notes.
  • The workshops fill up fast so please book early to secure a place. If you miss out please contact me to be added to the waiting list.
  • Due to time constraints, unfortunately, I am unable to offer a refund or credit if you can’t make it to a booked workshop, so please check the date carefully. However, I am happy for you to send a friend along in your place. Read the full Terms & Conditions HERE.

    1. Hi Fleur, I have just been working on my dates for next year this week. I will look at how I could set this up, where are you based? I will be coming to the main centers plus Hamilton, Dunedin and Napier at this stage next year.

  4. Hi there Nicola, if I can’t make it to your course how can I get hold of the new revised sour dough recipe. I am wanting to attempt it for the first time but see you have mentioned you have revised it etc. Regards PAula

    1. Hi Paula, this recipe works fine. I have just tweaked a little to make it more user-friendly for the workshops plus variations. The main thing to help off-set the sourdough flavour is to add a little sweetener to the mix. I like to use 2 tsp apple syrup or muscovado sugar but any sugar or honey will do. Happy bread making!

    HI Nicola, Thank you for the knowledge and bread making inspiration you shared at the Sourdough Workshop in Nelson recently. You packed some clear and precise information about making sourdough bread into the two hours and I especially enjoyed how hands on it was with you passing around bowls for us to see and smell in the different stages of development. I bought the workshop as a gift for Mothers Day for my Mum and I and we are now both getting into the fun of making and eating homemade sourdough bread.
